
Coconut Pistachio Cake with Meringue Buttercream
This coconut and pistachio cake is one of three tiers baker Cynthia Barcomi created for the official U.S. 250th anniversary celebration in Berlin — a cake built to bring the flavors of America together for a milestone birthday. Delicate ground pistachios and sweetened coconut give this layer a nutty, tropical edge, finished with a silky meringue buttercream in billowy swirls.
