
Carrot Cake
Rounding out the trio, this carrot cake is the third tier of the U.S. 250th anniversary cake Cynthia Barcomi created for the official celebration in Berlin. It’s a moist, warmly spiced cake studded with crunchy California walnuts and chewy California raisins, plus sweet pineapple and coconut for extra depth. Finished with a tangy lemon-cream cheese frosting, it’s the layer that ties the whole occasion together.
