Thai-style Scallop Carpaccio

Ingredients

12	scallops each approx. 25g
1/2	organic lemon (untreated)
6 tbsp	olive oil
1	pink grapefruit
1 tsp	chopped red chili pepper (not too spicy)
1/2 bunch	cilantro
	Salt from the mill
	pepper
	a little sugar

Step 1
Finely grate lemon peel, squeeze lemon, chop chili, pluck and chop coriander leaves, peel grapefruit, remove white skin, cut out grapefruit fillets.
Step 2
Mix all ingredients to a marinade.
Step 3
Cut scallops crosswise into thin slices, marinate in marinade for 15 min.
Step 4
Arrange in flower shape on small plates, drizzle with remaining marinade.
