Teriyaki Pizza with Mushrooms

Step 1
Preheat oven to 200°C.
Step 2
Heat a frying pan on medium heat. Place the chicken thigh in the pan and brown on both sides. Then cover the frying pan with a lid, reduce heat to low, and cook until the chicken thigh is cooked through.
Step 3
Place the chicken thigh skin-side down in the frying pan, pour in the Teriyaki Sauce and increase heat to medium while shaking the pan. Cook until the sauce is thickened. Then remove the chicken thigh, place on cutting board and cut into bite-size pieces. Reserve sauce.
Step 4
Cut o the stems of the Shiitake mushrooms and slice the caps thinly. Cut away the hard bottoms of the Shimeji mushrooms and break into 1 or 2 pieces. Cut away the hard bottoms of the Enoki mushrooms, cut in half lengthwise and then separate into small clusters.
Step 5
Combine mayonnaise with the sauce remaining in the frying pan and spread mixture on the pizza crust.
Step 6
6. Top the pizza with the chicken, mushrooms and Monterey Jack Cheese.
Step 7
Bake the pizza in the oven for 15 minutes until top is nicely browned.
Step 8
Garnish with thinly-sliced green onions.
