Japanese Sweet and Savory Potato Bites

Ingredients

Potato Bites

6 pcsFrozen Tater Drums
2 tbspVegetable Oil
90 gCabbage Thinly Slice
1 tbspDried Fish Flakes (Katsuoboshi)
30 gMayonnaise
80 mlTeriyaki Sauce
1 tbspJapanese Soy Sauce
Roasted Shredded Seaweed (few)

Teriyaki Sauce

400 gWater
500 gJapanese Soy Sauce
15 gMirin Sweet Seasoning
100 gSugar
100 gTapioca Flour

Potato Bites

  1. Pre heat oil in a fryer or a deep pan to 175°C. Fry tater drums according to packaging or approximately 3 minutes.

  2. In a skillet, heat oil, add the squid and cabbage. Sauté with Japanese Soy Sauce until light-brown color, place on the plate.

  3. Place the prepared tater drums, followed by the teriyaki sauce, and mayonnaise on top of squid/cabbage plating. Then sprinkle fish flakes and seaweed. Serve

Teriyaki Sauce

  1. In a pot, boil water and add Japanese soy sauce until re-boiled.

  2. Add the sugar and mirin.

  3. Add the tapioca flour in small batches until thickened, whisk smooth.
