Gingerbread Wreath & Christmas Ornaments

Who doesn’t love sweet, edible christmas decor? Confectionery world champion, Andrea Schirmaier-Huber has the perfect recipe for your next christmas baking activity. Made with California Raisins, these gingerbread cookies will quickly get you in the Christmas spirit!

Ingredients

	Gingerbread
250 g	honey
175 g	butter
200 g	sugar
40 ml	water
1 pck.	vanilla sugar
1	egg
1 tbsp	organic lemon peel, grated
4 tsp	cocoa powder
650 g	flour
4 pinches	gingerbread spice
100 g	finely chopped Califonian raisins
	some milk
	Icing and Toppings
3	egg whites
600 g	powdered sugar
	some lemon juice
	a little bit of sugar
	some raisins, nuts, aniseed

Step 1
Place honey, butter, sugar, vanilla sugar and water in a saucepan. Heat while stirring until the sugar is dissolved. Then let cool briefly.
Step 2
In a second bowl, whisk the egg. Add the fresh lemon zest, cocoa powder, flour, raisins and spices and mix everything together. Add the honey and butter mixture and knead everything together for several minutes. Allow to cool further.
Step 3
Wrap the dough in plastic wrap and refrigerate overnight This will firm up in the refrigerator, let it rest for a day.
Step 4
Let the dough sit at room temperature before rolling it out. Then knead briefly and roll out flat 3mm on lightly floured work surface. Cut out a large O (about 26 cm in diameter). The O should have a width of 2 cm. Then cut out stars with different shapes and place on trays with baking paper. Preheat oven to 180 °C (convection oven 160 °C). Bake for about 5-15 minutes, depending on size (small stars require less baking time).
Step 5
Whip the egg whites until stiff and add the sifted powdered sugar. The icing should not be too firm, otherwise you can not spray it. Then add some more egg white or lemon juice.
Step 6
Decorate the stars with the icing. Stick the decorated stars with icing on the O. Lastly, decorate with raisins, nuts and star anise.
Step 7
Tip: This dough is also good for baking Christmas tree ornaments.
