Florida Grapefruit and Pumpkin Seed Flapjacks

Zesty Florida Grapefruit meets crunchy pumpkin seeds in these golden, chewy flapjacks. Whether served as a snack or a quick breakfast, these bars bring a delicious twist to a classic favorite!

Featuring Florida Grapefruit

Ingredients

1	Florida Grapefruit
250 g	butter or plant-based alternative
125 g	soft brown sugar
125 g	white sugar
6 tbsp	golden syrup
2 tbsp	mixed seeds
1 tbsp	pumpkin seeds
500 g	rolled oats

Step 1
Place the butter and both sugars into a large pan on low heat. Once the butter has melted, add in the golden syrup, then turn up the heat and bring to a boil.
Step 2
Add the zest and juice of the Florida Grapefruit.
Step 3
Sprinkle in the seeds and oats, and stir together making sure all of the oats are covered.
Step 4
Spoon the mixture out onto a 20cm square baking tray lined with parchment paper.
Step 5
Using the back of a spoon, press the flapjack down so that it is all even. Bake in the oven at 170ºC for 20 minutes.
Step 6
Once baked, leave the flapjack to cool before cutting into portions.
