Classic Texas Pecan Pie

This yummy Texan Pecan Pie serves eight people and goes really well with ice-cream on the side.

	Single pie crust for 22cm pie, uncooked
100 g	sugar
240 ml	dark corn syrup
3	large eggs
4 tbsp	melted butter
1 tsp	vanilla
150 g	shelled whole Texas pecans

Step 1
Heat oven to 232°C. Roll out uncooked pie crust, line 22cm pie plate and set aside.
Step 2
In small saucepan, combine sugar and corn syrup. Heat and stir until thickened and temperature measures 109°C on candy thermometer. Remove from heat and set aside.
Step 3
Add eggs to bowl of electric mixer and beat on medium speed until lemon colored. Lower speed to slow, then slowly trickle the hot syrup down inside surface of bowl. Do not pour the syrup directly into the eggs or they will curdle. Once well combined, add butter and vanilla. Remove bowl from mixer and stir in pecans.
Step 4
Pour contents of bowl into prepared pie crust. Place uncooked pie in oven, bake 10 minutes, then lower temperature to 148°C and bake 35 minutes.
Step 5
Remove pie from oven and allow to cool completely before serving.
