Sunken Apple Cake

Better than searching for a sunken treasure – because you’ll find the sunk apples right away. Their slight tartness pairs perfectly with the sweet raisins in the base. A classic without any fuss!

Featuring California Raisins.

Ingredients

	For a 24 – 26 cm springform pan
140 g	softened butter
100 g	cane sugar
4	room-temperature eggs
150 g	whole grain spelt flour
1 tsp	baking powder
1 pinch	salt
1/2 tsp	ground cinnamon
1 tsp	vanilla sugar
5 tbsp	milk
50 g	California Raisins
4	tart apples (Boskoop, Braeburn)
	a little lemon or lime juice

Step 1
Preheat the oven to 180°C with both top and bottom heat.
Step 2
Line the springform pan with parchment paper.
Step 3
Wash, peel, halve, core the apples, and make several cuts on the curved top. Drizzle with lemon juice to prevent browning.
Step 4
For the base, mix the raisins, flour, and baking powder.
Step 5
Cream the butter with the sugar, spices, and salt.
Step 6
Gradually beat in the eggs.
Step 7
Then, alternately stir in the flour mixture and the milk.
Step 8
Pour the batter into the springform pan, smooth the top, and arrange the apple halves on top.
Step 9
Bake for about 40-45 minutes, until golden brown.
Step 10
Dust the cooled cake with powdered sugar.
