Maine Lobster Bisque

Bisque is an intense soup and a great way to serve lobster. Together with vermouth, port wine and a mixed bundle of spices this bisque is a perfect starter for a festive menu.

Featuring Lobster from Maine

Ingredients

2 kg	US lobster carcasses
5 tsp.	Noilly Prat
5 tsp.	white port wine
50 g	leek
50 g	celery sticks
50 g	onion
100 g	fennel
10 g	tomato paste
1	bay leaf
4	juniper berries
3	cardamom capsules
4 g	fennel seeds
4	garlic cloves
40 ml	cream
200 g	butter
2	lemons
2	pinches of saffron
	salt, pepper

Step 1
Roast the lobster carcass in the oven preheated to 200 degrees for half an hour.
Step 2
Put the roasted lobster carcasses and the tomato paste in a pot and roast both again. Deglaze the whole thing with Noilly Prat and white port wine.
Step 3
Fill up with approx. 2 liters of water. Then add leek, celery, onion and fennel and bring to the boil once.
Step 4
Add the bay leaf, juniper berries and dried cardamom, fennel seeds and the garlic cloves. Now let it simmer lightly for 2 hours.
Step 5
Strain the stock and let it reduce by half. Add full cream and butter - and season to taste with salt, pepper and lemon juice.
