Featuring California Raisins 

Ingredients

40 gCalifornia raisins
2 tbsprum
4eggs (separated)
25 gsugar
vanilla sugar
400 mlmilk
125 gflour
40 gbutter
icing sugar
salt

  1. Step 1

    Whisk egg yolks, sugar, salt and vanilla sugar in a bowl until the mixture becomes pale yellow and creamy.

  2. Step 2

    Stir in milk and gradually flour, then add California raisins.

  3. Step 3

    Beat egg whites until very stiff, gently fold into batter.

  4. Step 4

    Heat butter in a skillet, pour in batter and fry over low heat until the underside is lightly browned, turning repeatedly until everything is lightly browned.

  5. Step 5

    Tear as you go. Arrange on plates and sprinkle with powdered sugar.

  6. Step 6

    Serve with stewed California plums.
